The trick to beans, especially at this altitude is a pressure cooker. Otherwise, they never taste right.

And here I thought the most desirable frijoles are slow, slow cooked over a small wood fire in an unglazed clay pot. They should taste with a little clay, and a hint of woodsmoke. For many Mexicans this is the taste of home and the magic of old grandmas.
