Bolillos
Where can one find fresh Bolillos that have not been placed in plastic bags? Location close to Walmart.

I like ten crispy. Put them in them in the oven. My best luck is t buy frozen ones at Guard Pharmacy and bake them at
home. Try it.....it really works

I think you're looking for birotes.
I used to buy them in Joco at the Oso Cremeria - had to get there early as they sold out fast when he had them - ask Saul. They are easier to find in Guad. Never saw them around here but I would ask at the Chapala mercado or maybe the Pan bakery north of the carretera on Colon in Ajijic. Don't know if they make them but they might know where you can get them. Failing that, ask Pancho in his new store as he is baking lots of good looking breads.

They sell frozen unbaked buns at Farmacia Guadalajara?

You have to ask for them. They will think you are nuts but that is OK. Get the girl that tends to the bakery goods and ask for a dozen. They bake them part way to hold shape and then store them in the freezer at the Guad Pharmacy in Ajijic.
Keep them in the freezer at home and take out what you need.
They are like homemade and the flavor is so good.
Practice your Spanish enough to ask for them.

I've only found the "tooth breaking"


But they're crusty alright,.....not spongy.

I want a crispy roll so it will bounce off the deck. bake them yourself and you get what you want

Let me add one more thing. I like them ard on the outside but soft and warm on the inside and not chewy. By baking them yourself you can have whatever you want to a degree.

You can always ask the French baker in Ajijic to bake some for you , when you get them fresh out of the oven they are wonderful..
