I only use the dry noodles from Italy. They are made with the right flour for better taste and texture. The results can be frozen with no problem.

Me too gringal. DeCecco or Barilla. I find any other pasta that is not from Italy way too starchy.

Be sure to read the labels on those brands....Barilla says...flavor of Italy...made in Mexico...Lucchetti ...also made in Mexico. You can usually tell by pricing the items that are truly imported. Not sure about the other one.

Correct but just because something is made in Mexico does not mean that the ingredients used to make a brand name product are different. Brand names are registered. Basically, you are looking for pasta made with Hard Durum Semolina Wheat Flour. That's what makes the difference.
