What I had for lunch
I wasn't really sure where to put this so I'm sticking it here...
I have had this craving for pancakes for nearly three weeks. First my pancake mix was solid in the box so I bought more. Then the eggs were old so I bought more.
Then I had no REAL maple syrup so I bought more.
Finally! Pancakes! But I forgot to put the blueberries in and I ate them without.
Discovery!!! Use the last pancake like a taco... spoon ice cream on it and load it with blueberries and fold it up like a taco and eat it. Damn! It was GOOD!

EXACTLY! I guess you remember the waffle ice cream sandwiches from the C.N.E. too?

Sounds good. I think I'll make some tomorrow. But I've never used pancake mix in my life. They're so easy to make from scratch.

No ice cream for you my friend. Try it with whipped cream or yogurt or cottage cheese.

Wonder how they make them now... not the waffles but the rectangular boxed ice cream must be really hard to find. So easy to slice a one inch thick square and pop it onto the waffle... instant ice cream sandwich.

El Patio in Jocotepec has the best breakfast waffles with warm berries and a scoop of delicious vanilla ice cream as well as fruit on the side and a basket of very good bread! It is absolutely delicious:-) They have pancakes too and I believe you can get them with ice cream too!!! We ate there just after we arrived lakeside a year ago and I did not really know what I ordered but boy was I happy with the results! Fresh squeezed OJ of course and they also have some chorizo breakfast burritos that are so good too. Actually every single dish we have had there has been really really good! We haven't been there since March but they do have very spacious outdoor eating area.
