Peach jalapeño jam
This summer a friend of ours gave us a BUNCH of Texas peaches. We always grow chilies. Well my sweetie made the BEST peach jam I have ever had!!!!!
I used to buy peaches in Michocan,not the best but for cooking not bad. Anyway I thought I would pass along the recipe she so kindly provided after we had homemade biscuits and jam..
Peach jalapeño jam
Ingredients:
2 1/2 pounds peaches
2 cups granulated sugar
1/4 cup lemon juice
2 jalapeños, seeds and stems removed, diced
Blanche the peaches for 1 minute.
Remove the peaches from the water and transfer to a bowl filled with ice water to stop them from cooking. Once cool enough to handle, gently rub off the skins. Cut into into 1/4-inch thick slices.
Put peach slices in a pot with the sugar and let sit for 1-2 hours or until the sugar has dissolved and the peaches are soft and juicy.
Put a plate in the freezer. Then, stir in the lemon juice and the diced jalapeño to the peaches. Then put the peach mixture in the sauce pot and turn the heat to high. Bring the pot to a boil and then turn the heat down to low, stirring occasionally. Don’t worry if there’s foam on top of the jam. While some people say to skim it, I leave it and find it doesn’t affect the jam.
After 40 minutes, take the plate out of the freezer and place a spoonful of the jam on the plate. After a minute, tilt the plate and if the jam doesn’t run then it’s ready. If it does run, continue to cook it while occasionally stirring for 5 more minutes and then check again. Continue to cook and test until it doesn’t run. This will yield 2 pints.
She did not can the jam as it was a small amount and won't last long. To night I am going to use one the grilled chicken... ENJOY!

That sounds delicious.... Can you find Peaches anywhere Lakeside? If so, what is best Peach Season?

Another place to get peaches is in Talpalpa a short drive or day trip from lakeside. I got mine in summer can't remember what month.
