Our son is visiting in a few weeks, and smoking meat is his current fixation.

I am looking for a source for mezquite or hickory wood chips, and a recommendation for a butcher who could provide a 2 kilo brisket.

If he can teach me all his tricks (as I taught him about computers) then maybe there is a business opportunity Beer

If you want to smoke large quantities, purchase an old fridge or upright freezer. You can convert them into a great smoker.

Sonora Meats has brisket. It is very lean and lightly flavored though (as is most Mexican beef). The firewood guy has a truckload of Mesquite, I'm sure he can sell you some chunks. He has another wood too that he likes for cooking - but I never really got the name, and I don't like the smell of it. A medium hard white wood. Mesquite is a very strong flavor and a very hot fire, almost like coal.

I think Bubba's BBQ sells brisket, already cooked and smoked of course.

A good thing to try is long, slow grilling in banana leaves - it leaves a unique taste.
