Breakfast
Tortilla Sunrise
Ingredients:
*Corn Tortillas
*Refried Beans
*Ham, Bacon, Sausage Patties, or Chorizo
*Eggs
*Shredded Cheese (Any kind you like)
*1/4 Cup Canola Oil
*Your Favorite Hot Sauce (optional)
Directions:
1. Heat the refried beans in a sauce pan or microwave.
2. Prepare the meat as you would like it.
3. Pre-heat the oil in a frying pan at medium to low temperature.
4. Fry the tortillas just until they're soft and limp (about 20 seconds per side).
5. Spread a layer of beans on a tortilla, top with cheese and meat, add another tortilla, spread on a layer of beans, and top it off with 1 or 2 eggs, fried or poached.
6. Add salt and pepper to taste.
7. Sprinkle with hot sauce, if you like it that way.
Note 1: The amount of ingredients will depend on the number of people you have to satisfy.
Note 2: Chorizo is a type of Mexican sausage. The real thing is not easily found in most of the United States.

Note two kind of says it all. You do not live down here, do you. Damn, and I was on my way over for breakfast tomorrow. Sounds wonderful. Thanks for posting. I will give it a try. Zoey

We've lived here for 4 years, currently in Chapala. I put that recipe on my website, which is visited mostly by NOB people and various European, Asian, and Australian people. I added that note, in case they never heard of Chorizo.
