As Residente Temporal's, my wife and I will need get our INM forms stamped (as noted in another recent post) before leaving Mexico.  We're going to try and get them stamped at GDL but perhaps that is not the the correct procedure and we should get them stamped in Cancun.  So, does anyone the location of the INM office at Cancun?

Yes, technically you should get it stamped in Cancun howevdr you could ask the guys in GDL if they will stamp it. They probably will and warn you not to ask again like they just did with me.
