Looking for one of those street corner stands that cooks up pork skin into delicious chicharron.  Need it this weekend (Aug 3-4).  Somewhere around Ajijic would be most convenient.  Any ideas where and what time it's usually ready for sale?

There is usually a guy on the corner a block south of Farmacia GDL in Ajijic.

This is the place! Purchased 3 "chunks", just under 1 lb, for $60 MXN. The lady in the corner shop opposite, selling fresh chicken, weighs the chicharron and collects the money.
