Delicious cabrito in SAT
Mr. Thang bought some delicious grilled meat in San Antonio today. We got Lechon, cabrito and machito (ick). This vendor is only there on Sunday. It's just a stand on the side of the road where the dusty chicken is and it is very good. They also have chorizo but we didn't get any.

If you have to ask, you probably don't want to know, as they are sacred to one half the population.
Totally agree about the carnes, much like the place on highway 15, south and west of Jocotepec, as you are leaving town towards Guadalajara, and I think they are there on Saturdays, as well.

I've been to Monterrey several times, and it is widely recognized as (one of?) the homes of cabrito. I will look for this place on Sunday. THX.

I assume Mainecoons in a machito head.

As I answered my daughter the first time she saw machitos, asking what they were. I asked her if she knew the difference between a bull and a steer. She said yes and I said the difference are the machitos,

True, but years ago, Torreon and the tri-cities liked to think they were THE CAPITAL of cabrito asado. Don't know if that is still true as I haven't been there for years.
It's a favorite of Los Norten~os.

Re: Delicious cabrito in SAT
When I first moved to Catemaco, I shopped in a local tienda and needed eggs. I was hesitant to ask for huevos as I knew that word was slang for something else. I knew I couldn't ask the man behind the meat counter if he had any. So I went home where my husband said to ask for juevos de pollo. Back at the store I was distinctly overheard as I asked the whereabouts of chicken's balls. Being one of few expats, it was all in good fun.

Thanks Chris, I will have to give them a try. Most of the time around the Lake, you can only find it in birria...sometimes.
The roadside restaurant at the crossroads (SW corner) before entering Mazamitla, usually has machitos, very good.
Sunnyvmx, in the "old days", polite Mexican ladies would ask for "blanquillos", or "rojos". ....the rest was understood.

The restaurant takes its name from the top state for cabrito over mesquite wood fire the epicenter being the town of Monterrey.
One time I was at a cabrito restaurant where the cooking kids looked like big chickens on the sticks. I ordered asking for the part offering ribs. I ate what I could and took the rest home.
The next afternoon I remembered the cabrito and popped it into the microwave and went into another room. When I returned I thought of the song, "Who let the dogs out?", the stench reminiscent of a wet hunting dog after a quail shoot. I didn't smell it in the restaurant at all and while I love cabrito, I will take mine home in a true doggy bag.

Some foods just don't reheat very well.

Me, I just stand there until someone say's "que vas a llevar , Guera?"
But I really liked how someone on yahoo answers so eloquently explained the question:
"PA DISTINGUIRLOS DE LOS ROJOS, O A VECES POR RESPETO SI VAZ A LA TIENDA Y TE ATIENDE UN SEÑOR COMO LE VAZ A DECIR TIENE HUEVOS NO VERDAD, ENTONCES SE LES DICE BLANQUILLOS"
