Pastelería America in Ajijic
Shoutout to them for their variety of cakes by the slice, individual tarts, mousses and cookies. They will also make cakes of any size, decorated to order for holidays, etc. They are easy to work with on special orders.
On Monday they had slices of zanahoria (carrot) cake, flan cake (chocolate cake with layer of vanilla flan), cappuccino cake, mini pecan tarts, individual limón and also strawberry mousses over a cookie crust. And a host of galletas!
Their Ajijic location is on the southside of carretera between Galeana and Marcos Castellanos. I believe their main location is in Chapala.

I mentioned their chocolate flan cake earlier. It's my favorite.
What I found out recently is that this cake is un Pastel Mágico.
The magic is because the layers in the baking pan switch positions during cooking.

I've continued to buy cake slices here and they remain excellent.
A few days ago I bought their chocolate mousse.
Oy---I almost wish I hadn't seen it...so rich, smooth, decadent.
A caloric bomb, I'm sure.

While I generally love pastries and can pig out on them easily, I can't stand most Mexican cake- what others might consider super moist, I consider wet, and can't handle wet baked goods. Like I would never dip a cookie in milk, and even watching someone do it turns my stomach.
Now chocolate mousse- I could eat way too much of that.

Today they had slices of Pastel de Naranja which I hadn't seen there before. So refreshing! Real orange flavor, you can see the zest they grated on/in it. Tons of whipped cream between layers. Not real sweet, just perfect.
Still a great price for what you get....45p per good-size slice wrapped up to go.

Also in Ajijic between Epsilon Laboratory and Biencom Realty near Aldama street is Pasteleria Marisa. We have eaten here and the cakes are excellent. It has a 4.4 rating on Google.

Marissa's doesn't offer cakes by the slice. They have a very few small cakes, but not small enough for us.
Marissa has some good cookies and brownies and a decent selection of cupcakes....I always buy my car wash guy a treat from them.
Used to buy at Marissa's often, but since Pastelería America and Eva Antunez opened I rarely go to Marissa's for our treats.
fyi, Eva's is on the south side carretera next to Charter Club Tours. She opens 'late' by bakery standards, at 11am. Her brother bakes their mother's cookie recipe (the diamond shaped ones) and they are superb. Her cakes are exceptional (available by the slice) especially her Kahlua Chocolate one. Mmmmm....
